Dandelion Cupcakes
I recently went to a foraging class and learned a lot of new things! Near the end of the class, we were served dandelion cupcakes with little violets on top. They were so cute, I duplicated them at home.
It’s not really a recipe per se, but just general directions.
Pick a handful or two of dandelions then wash and dry them thoroughly. Pull off just the yellow petals (the green has a stronger bitter taste you don’t really want in a cupcake.)
Mix up your favorite cupcake recipe, stir in the yellow petals, then bake like normal.
Let cool, frost and add an edible flower or two on top for decoration.
Some edible flower ideas:
- pansies
- violets
- violas
- dianthus
- lilac
- bachelor buttons
- hollyhocks
- roses
- … and the list goes on! :)

I love this idea! (too bad I didn’t get the email about 2 hours ago, I just baked my birthday cupcakes, they would have looked nice in a vanilla cupcake!)
I will try this for sure before too long. I have been wanting to try out recipes made with things I have on hand–or I can steal from my parents!

Omg! How do find these classes? I cant find one here in San Diego Ca.
I couldn’t find them around here either, but then discovered we have a small, Amish type store nearby and they have fantastic classes like soup making, foraging, gardening, all sorts of stuff! I feel really fortunate to have found them! :)
Okay, now I’m definitely not mowing over my dandelions again, Jan! I think I’ll just gently “remove” them instead. It’s also interesting how many edible flowers there are to choose from. As an aside, we’ve recently discovered large patches of Miner’s Lettuce on our property. Fabulous in salads…and free! Thanks for sharing what you learned in class. That cupcake looks tasty! :)
Yay! It’s funny, when my hubby goes to mow the lawn, I run around like mad in front of the lawn mower rescuing dandelion and violet flowers in his path. (He thinks I’m a little nuts, I suspect!) :)
That’s great about the Miner’s Lettuce! Free is good and free and tasty is even better!
