Hi Anjuli! You generally want to make sure that herbs &amp; flowers are dry before infusing in oil. If you add them to oil with any moisture still in them, they can form cozy little pockets where bacteria or mold can grow. However, infusing as soon as you notice the leaves are dry is a great idea &amp; will give you the freshest oil! :)]]></description>
